ORIGIN
The grapes for this wine come from four terroirs: the area of Nîmes which gives complex notes, the eastern Aude valley which lends elegance, the Béziers plain which brings richness and the western Aude region.
VINIFICATION
Relatively long maceration. Part of the cuvée undergoes carbonic maceration. 6- to 9-months ageing in oak barrels for a part of the blend, the remaining is aged in stainless steel vats.
TASTING NOTES
Dark robe.
Aromas of blackcurrant, blackberry, cherry, peat, cinnamon, thyme.
Round, rich and long palate with ripe tannins.

WINE AND FOOD
Enjoy with chicken with ratatouille, stuffed tomatoes, lentils with salt pork.

SERVING SUGGESTIONS  Serve at 17°C.

Gilbert & Gaillard 2019 : Gold

Druivensoorten: 40% Merlot, 30% Corvina, 30% Croatina. Deze wijn wordt gemaakt via de Passimento-manier. Een wijntechniek waarbij de druiven gedurende een aantal maanden worden gedroogd vooraleer ze geperst worden. Hierdoor krijgt de wijn meer concentratie van de smaken en gaat er een lichte zoete toets te vinden zijn in de smaak. Zalig om te combineren met een goed stuk gegrild vlees of een stukje wild ! Gekoeld is deze wijn ook perfect te drinken bij een zomerse barbecue!

The Proprietors blend is once again impressive and serious in 2016.
Medium to full-bodied, it is strewn with black fruits, exotic spice and chards of dark chocolate. Sweet spicy oak melts into a dense, powerfully-fruited and structured core. The majority Cabernet Sauvignon gives a cassis purity and salty edge, while the Shiraz component adds a meaty, savoury and spicy edge.
The blend is rounded off by the remaining Bordeaux cultivars in a complexity explosion from start to finish. It is exquisitely textured and finely tuned, the 2016 will open up over the next 5 years and age for a decade or more.
